Ingredients
CAKE
- 1 cup (120g) cake flour
- 3/4 cup (150g) granulated sugar, divided
- 4 large egg yolks
- 1/2 cup (120ml) coconut milk
- 1/4 cup (60ml) vegetable oil
- 2 tablespoons fresh lime juice
- 2 teaspoons lime zest
- 4 large egg whites
- 1/4 teaspoon cream of tartar
- Pinch of salt
TOASTED MACADAMIA CRUNCH
- 1 cup (140g) macadamia nuts, coarsely chopped
- 2 tablespoons shredded coconut
- 1 tablespoon unsalted butter
- 1 tablespoon brown sugar
- Pinch of salt
Instructions
- Preheat oven to 325°F (160°C). Do not grease a 9-inch (23cm) chiffon tube pan.
- In a large bowl, whisk together cake flour, 1/2 cup sugar, and a pinch of salt.
- In a separate bowl, whisk egg yolks, coconut milk, vegetable oil, lime juice, and lime zest until smooth.
- Pour the wet ingredients into the dry ingredients and stir until just combined.
- In a clean mixing bowl, beat egg whites and cream of tartar on medium speed until foamy.
- Gradually add the remaining 1/4 cup sugar to the egg whites, increasing to high speed, and beat until stiff peaks form.
- Gently fold one-third of the whipped egg whites into the batter to lighten it, then fold in the remaining whites until no streaks remain.
- Pour the batter into the ungreased tube pan, smoothing the top with a spatula.
- Bake for 45–50 minutes, or until the cake springs back when lightly touched and a skewer comes out clean.
- Immediately invert the pan onto a bottle or heatproof funnel and let the cake cool completely upside down to maintain height.
- Meanwhile, in a small skillet over medium heat, melt butter. Add macadamias, shredded coconut, brown sugar, and a pinch of salt, stirring constantly until golden and fragrant, about 3–4 minutes. Transfer to parchment to cool.
- Once the cake is completely cool, run a thin knife around the edges and gently remove. Slice and sprinkle with the toasted macadamia crunch before serving.

Storage: Store cake in an airtight container at room temperature for up to 2 days. Keep macadamia crunch separate to preserve crispness.
For the fluffiest chiffon, ensure your egg whites are whipped until stiff peaks form and gently fold them into the batter to preserve airiness. If you don’t have macadamias, cashews or almonds make a tasty substitute.
To keep the crunch crisp, toast the nuts just until golden and store them separately in an airtight container. Leftover cake can be stored at room temperature, covered, for up to 2 days.
