Ingredients

INGREDIENTS

  • 2 cups all-purpose flour
  • 1 cup almonds, roughly chopped
  • 1/2 cup honey
  • 1/4 cup sugar
  • 1/4 cup unsalted butter, softened
  • 3 large eggs
  • 1 tablespoon dried culinary lavender
  • 1 tablespoon citrus zest (orange or lemon)
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt

Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, cream together the softened butter, honey, and sugar until light and fluffy.
  3. Beat in the eggs one at a time, mixing well after each addition. Stir in the lavender and citrus zest.
  4. In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add the dry ingredients to the wet mixture, combining until a dough forms.
  5. Fold in the chopped almonds until evenly distributed throughout the dough.
  6. Divide the dough in half and shape each half into a log about 12 inches long on the prepared baking sheet.
  7. Bake for 25-30 minutes, until lightly golden and firm. Remove from the oven and let cool for 10 minutes.
  8. Slice the logs diagonally into 1/2-inch thick pieces. Arrange the biscotti back on the baking sheet, cut side down.
  9. Return to the oven and bake for an additional 10-15 minutes until they are crisp and golden on both sides.
  10. Allow to cool completely before serving.

Notes

For a more intense flavor, try soaking the dried lavender in the honey overnight before using it in the recipe.

To avoid overbaking, keep an eye on the biscotti in the second bake; they should be lightly golden and firm to the touch. If you don’t have fresh lavender, you can use culinary dried lavender, but reduce the amount to prevent overpowering the other flavors.

These biscotti store well in an airtight container for up to two weeks. For a special touch, consider drizzling them with a simple icing made from powdered sugar and lemon juice before serving!
