  • 2 ribeye steaks
  • 4 tablespoons unsalted butter
  • 4 cloves garlic, minced
  • 1 tablespoon fresh rosemary, chopped
  • 1 tablespoon fresh thyme, chopped
  • Salt and pepper to taste
  • 1 cup cherry tomatoes, halved
  • 1 bell pepper, sliced
  • 1 zucchini, sliced
  • 1 cup broccoli florets
  • 2 tablespoons olive oil

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. In a small bowl, mix the softened butter with minced garlic, rosemary, thyme, salt, and pepper until well combined.
  3. Season both sides of the ribeye steaks with salt and pepper. Heat a skillet over medium-high heat and add 2 tablespoons of the garlic herb butter.
  4. Sear the steaks for 4-5 minutes on each side for medium-rare, then remove from the skillet and let rest.
  5. While the steak is resting, toss the cherry tomatoes, bell pepper, zucchini, and broccoli in olive oil, salt, and pepper on a baking sheet.
  6. Roast the vegetables in the preheated oven for about 15-20 minutes, or until they are tender and slightly caramelized.
  7. Slice the rested steak and serve topped with the remaining garlic herb butter. Arrange the roasted rainbow veggies on the side.
