  • 1 head garlic
  • 1 tablespoon olive oil
  • 1 onion, diced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 4 cups vegetable broth
  • 1 can (15 oz) white beans, drained and rinsed
  • 4 cups kale, chopped
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 cup heavy cream (or coconut milk for dairy-free)
  • Fresh parsley, for garnish

Instructions

  1. Preheat your oven to 400°F (200°C). Cut the top off the head of garlic, drizzle with olive oil, wrap in foil, and roast for about 30 minutes until soft.
  2. In a large pot, heat olive oil over medium heat. Add the diced onion, carrots, and celery. Sauté for about 5-7 minutes until soft and fragrant.
  3. Once the garlic is roasted, squeeze the cloves out into the pot with the vegetables. Stir to combine.
