  • 2 oranges, segmented
  • 1 grapefruit, segmented
  • 4 cups mixed greens (arugula, spinach, or kale)
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup walnuts, toasted
  • 3 tablespoons olive oil
  • 2 tablespoons balsamic vinegar
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Wrap the beets in aluminum foil and place them on a baking sheet.
