Ingredients

INGREDIENTS

  • 2 cups mixed seasonal vegetables (such as zucchini, bell peppers, and carrots), diced
  • 1 can (15 oz) chickpeas, drained and rinsed
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 2 tablespoons harissa paste
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • Fresh cilantro or parsley for garnish
  • Lemon wedges for serving

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, combine the diced vegetables, chickpeas, onion, garlic, harissa, cumin, coriander, olive oil, salt, and pepper.
  3. Toss everything until the vegetables and chickpeas are well coated in the harissa mixture.
  4. Spread the mixture evenly on a baking sheet lined with parchment paper.
  5. Roast in the preheated oven for about 30-40 minutes, or until the vegetables are tender and lightly caramelized, stirring halfway through cooking.
  6. Remove from the oven and let cool for a few minutes before serving.
  7. Garnish with fresh cilantro or parsley and serve with lemon wedges.

Notes

This dish can easily be made vegan by ensuring the harissa paste is free from animal products. For a heartier version, add some cooked quinoa or couscous before serving.

To enhance the flavor, consider marinating the chickpeas in some harissa beforehand. If you prefer less heat, reduce the amount of harissa or use a milder chili paste. This dish pairs beautifully with couscous or crusty bread to soak up the delicious sauce.

Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. Reheat gently on the stovetop or in the microwave, adding a splash of water if needed to restore moisture.
