Ingredients

INGREDIENTS

  • 1 can (15 oz) chickpeas, rinsed and drained
  • 2 tablespoons olive oil
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • 4 corn tortillas, cut into triangles
  • 1 avocado
  • 2 tablespoons lime juice
  • Fresh cilantro for garnish

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Spread the rinsed and drained chickpeas on a baking sheet. Drizzle with olive oil, and sprinkle with smoked paprika, garlic powder, cumin, salt, and pepper. Toss to coat evenly.
  3. Roast in the oven for 25 minutes, or until crispy and golden, stirring halfway through.
  4. While the chickpeas are roasting, prepare the avocado drizzle by blending the avocado with lime juice until smooth. If too thick, add a splash of water to reach desired consistency.
  5. In the last 5 minutes of roasting, place the tortilla triangles on another baking sheet and bake until crispy, about 5 minutes.
  6. Once both the chickpeas and tortilla chips are done, assemble the nachos by layering the chips, topped with roasted chickpeas. Drizzle with the avocado sauce and garnish with fresh cilantro.

Notes

For a spicier kick, add a pinch of cayenne pepper to the chickpeas before roasting.

For the best texture, ensure your chickpeas are thoroughly dried before roasting. You can also experiment with different seasoning blends to customize the flavor to your liking. If you’re short on time, canned chickpeas work perfectly—just rinse and drain them well.

Store any leftover chickpeas in an airtight container at room temperature for up to two days. You can re-crisp them in the oven for a few minutes if they lose their crunch.
