Ingredients

INGREDIENTS

  • 1 cup all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1/2 cup powdered sugar
  • 1/2 cup unsalted butter, melted
  • 1/2 teaspoon salt
  • 1 cup heavy cream
  • 1 1/2 cups semisweet chocolate chips
  • 1 cup fresh raspberries
  • 1/4 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 2 large eggs

Instructions

  1. Preheat the oven to 350°F (175°C) and line an 8x8-inch baking pan with parchment paper, leaving some overhang for easy removal.
  2. In a medium bowl, mix together the flour, cocoa powder, powdered sugar, melted butter, and salt until a crumbly dough forms.
  3. Press the dough evenly into the bottom of the prepared pan to create a crust. Bake for 10-12 minutes, then let it cool slightly.
  4. In a saucepan over medium heat, heat the heavy cream until it just begins to simmer. Remove from heat and stir in the chocolate chips until melted and smooth.
  5. In a separate bowl, mix the raspberries with granulated sugar and mash gently with a fork to create a chunky sauce. Add the vanilla extract and stir to combine.
  6. Pour the chocolate filling over the cooled crust, then dollop the raspberry mixture on top. Use a knife to swirl the raspberry sauce into the chocolate gently.
  7. Bake for an additional 20-25 minutes, or until the center is set. Allow to cool completely in the pan before lifting out using the parchment overhang and slicing into bars.

Notes

Tip: For a beautiful presentation, dust the top with powdered sugar before serving.

When making these bars, ensure that the raspberries are fresh for the best flavor. You can substitute fresh raspberries with frozen ones, but be sure to thaw and drain them first to avoid excess moisture. If you want to add an extra touch, consider drizzling melted chocolate on top before serving.

These bars can be stored in the refrigerator for up to a week. For longer storage, they can be frozen; just wrap them tightly in plastic wrap and place them in an airtight container. To serve, let them thaw in the refrigerator before enjoying.
