Ingredients

  • 1 can (15 oz) of chickpeas, drained and rinsed
  • 2 large roasted red peppers, chopped
  • 1 cup cherry tomatoes, halved
  • 1/4 cup red onion, finely chopped
  • 1/4 cup fresh parsley, chopped
  • 1 lemon, juiced and zested
  • 2 tablespoons olive oil
  • 1 tablespoon fresh thyme leaves
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Place whole bell peppers on a baking sheet and roast for 20 minutes until the skin is charred and blistered.
  3. Once roasted, remove peppers from oven, place in a bowl and cover with plastic wrap to steam for about 10 minutes. This will make peeling easier.
  4. Peel the skin off the peppers, remove seeds, and chop them into bite-sized pieces.
  5. In a large bowl, combine chickpeas, roasted red peppers, cherry tomatoes, red onion, and parsley.
