  • 4 medium sweet potatoes
  • 1 can (15 oz) chickpeas, rinsed and drained
  • 2 cups fresh spinach, chopped
  • 2 tablespoons olive oil
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • Fresh parsley or cilantro for garnish (optional)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Poke holes in each sweet potato with a fork, then place them on a baking sheet.
  3. Bake in the preheated oven for 25-30 minutes, or until tender when pierced with a fork.
  4. While the sweet potatoes are baking, prepare the chickpeas. In a bowl, toss the rinsed chickpeas with olive oil, smoked paprika, garlic powder, salt, and pepper.
