Ingredients

INGREDIENTS

  • 4 medium beets, peeled and cut into bite-sized cubes
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 1 cup crumbled feta cheese
  • 1/2 cup plain yogurt
  • 1 tablespoon fresh dill, chopped
  • 1 tablespoon fresh mint, chopped
  • 1 tablespoon lemon juice
  • 1 teaspoon garlic powder

Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a bowl, toss the beet cubes with olive oil, salt, and pepper until well coated.
  3. Spread the beets on a baking sheet and roast for 25-30 minutes, or until tender and slightly caramelized.
  4. Remove from the oven and let cool slightly.
  5. In a separate bowl, mix together the yogurt, dill, mint, lemon juice, and garlic powder until well combined.
  6. Once the beets have cooled, assemble the bites by placing a cube of roasted beet on a serving platter, topped with a spoonful of crumbled feta cheese.
  7. Drizzle the herbed yogurt over the top of each bite before serving. Enjoy!

Notes

Tip: You can also add a dash of red pepper flakes for a bit of heat!
