  • 2 medium eggplants, diced
  • 1 can (15 oz) chickpeas, drained and rinsed
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 1 can (14 oz) diced tomatoes
  • 2 cups vegetable broth
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1 tsp smoked paprika
  • 1/2 tsp cinnamon
  • Salt and pepper, to taste
  • 2 tbsp olive oil
  • Fresh cilantro and parsley, for garnish
  • 1 cup couscous
  • Pinch of saffron
  • 1 tbsp lemon juice

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Sauté the chopped onion until translucent, about 5 minutes.
  3. Add minced garlic and cook for an additional minute until fragrant.
  4. Stir in the diced eggplant and cook until it starts to soften, about 8 minutes.
  5. Add the ground cumin, coriander, smoked paprika, cinnamon, salt, and pepper, and stir to combine.
  6. Pour in the diced tomatoes and vegetable broth; bring to a simmer.
  7. Add chickpeas, cover, and let simmer for 30 minutes, stirring occasionally.
  8. While the tagine simmers, prepare the saffron couscous. In a separate pot, bring 1 1/4 cups of water to a boil. Add the saffron and lemon juice.
  9. Once boiling, remove from heat and stir in the couscous. Cover and let it sit for 5 minutes.
  10. Fluff the couscous with a fork and season with salt, if desired.
  11. Serve the tagine over the saffron couscous, garnished with fresh cilantro and parsley.

Notes

For added depth of flavor, consider adding a dash of harissa paste to the tagine for a spicy kick.
