Ingredients

INGREDIENTS

  • 2 medium sweet potatoes, peeled and cut into bite-sized cubes
  • 1/2 cup walnuts, roughly chopped
  • 1/4 cup maple syrup
  • 1 tablespoon apple cider vinegar
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon smoked paprika

Instructions

  1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a large bowl, combine the sweet potato cubes, olive oil, salt, black pepper, garlic powder, and smoked paprika. Toss to coat evenly.
  3. Spread the sweet potatoes in a single layer on the prepared baking sheet and roast for 15 minutes.
  4. While the sweet potatoes are roasting, mix together the maple syrup, apple cider vinegar, and chopped walnuts in a small bowl.
  5. After 15 minutes, remove the sweet potatoes from the oven and pour the maple-walnut mixture over them. Toss gently to combine.
  6. Return the baking sheet to the oven and roast for an additional 10 minutes, or until the sweet potatoes are tender and the walnuts are golden brown.
  7. Let cool slightly before serving. Enjoy warm!

Notes

Tip: For an extra crunch, broil the bites for 2-3 minutes after baking, keeping a close eye to prevent burning.

For an extra touch, try adding a sprinkle of cinnamon or nutmeg to the sweet potatoes before roasting. If you have nut allergies, feel free to substitute the walnuts with toasted pumpkin seeds for a similar crunch.

These bites are best served warm but can be stored in an airtight container in the refrigerator for up to three days. Reheat them in the oven for a few minutes to regain their crispy texture.
