Ingredients

INGREDIENTS

  • 1 can (15 oz) chickpeas, drained and rinsed
  • 2 tablespoons olive oil
  • 1 teaspoon smoked paprika
  • 1 teaspoon ground cumin
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon sea salt
  • 1/4 teaspoon black pepper

FOR THE GARLIC AIOLI

  • 1/2 cup mayonnaise
  • 2 cloves garlic, minced
  • 1 tablespoon lemon juice
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Pat the chickpeas dry with a paper towel and spread them on a baking sheet.
  3. Drizzle the olive oil over the chickpeas and sprinkle with smoked paprika, cumin, garlic powder, sea salt, and black pepper. Toss to coat evenly.
  4. Roast in the preheated oven for 25-30 minutes, stirring halfway through, until crispy and golden brown.
  5. While the chickpeas are roasting, prepare the garlic aioli by mixing together the mayonnaise, minced garlic, lemon juice, and seasoning with salt and pepper to taste.
