Ingredients

INGREDIENTS

  • 1 lb boneless skinless chicken thighs, cut into 1-inch pieces
  • 1/4 cup tahini
  • Juice and zest of 2 lemons
  • 2 cloves garlic, minced
  • 1 tablespoon honey
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon cumin
  • Wooden or metal skewers
  • 1 bell pepper, cut into chunks
  • 1 red onion, cut into wedges
  • Zucchini, sliced

Instructions

  1. In a bowl, combine tahini, lemon juice, lemon zest, garlic, honey, olive oil, salt, pepper, smoked paprika, and cumin. Mix well to create the marinade.
  2. Add the chicken pieces to the marinade, making sure they are well-coated. Let them marinate for at least 15 minutes.
  3. While the chicken is marinating, soak wooden skewers in water for 10 minutes if using.
  4. Preheat the grill to medium-high heat.
  5. Thread marinade-coated chicken pieces and vegetable chunks onto the skewers, alternating between chicken and veggies.
  6. Place the skewers on the grill and cook for 10-15 minutes, turning occasionally, until the chicken is cooked through and has nice grill marks.
  7. Remove from the grill and let rest for a few minutes before serving. Enjoy!

Notes

Tip: For a nutty flavor, consider adding sesame seeds to the sauce or sprinkling them on top of the skewers before serving.

For added flavor, let the chicken marinate in the lemon-tahini sauce for a few hours or overnight if you have time. This will deepen the flavor profile significantly.

Feel free to substitute the chicken with tofu or shrimp for a different protein option. Additionally, different vegetables like zucchini or bell peppers can be used based on your preference.

Store any leftovers in an airtight container in the fridge for up to 3 days. Reheat on the grill or in a skillet for the best texture.
