  • 2 cups mashed sweet potatoes
  • 1/2 cup pure maple syrup
  • 1/4 cup coconut oil, melted
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/2 teaspoon baking powder
  • 1 cup all-purpose flour (or gluten-free flour)
  • 1/4 teaspoon salt

SWIRL TOPPING

  • 1/4 cup cream cheese, softened
  • 2 tablespoons maple syrup
  • 1 egg yolk

Instructions

  1. Preheat the oven to 350°F (175°C) and line an 8x8 inch baking dish with parchment paper.
  2. In a large bowl, combine the mashed sweet potatoes, maple syrup, melted coconut oil, vanilla extract, cinnamon, nutmeg, baking powder, and salt. Mix until smooth.
  3. Gradually add the flour to the sweet potato mixture and stir until just combined.
  4. Pour the sweet potato batter into the prepared baking dish and smooth the top with a spatula.
  5. In a separate bowl, mix together the cream cheese, maple syrup, and egg yolk until creamy and smooth.
