  • 4 boneless, skinless chicken breasts
  • 1 cup fresh spinach, chopped
  • 1/2 cup ricotta cheese
  • 1/4 teaspoon saffron threads
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon paprika
  • 1 cup heavy cream
  • 3 cloves garlic, minced
  • 1 tablespoon fresh parsley, chopped

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a small bowl, soak the saffron threads in 1 tablespoon of warm water for 10 minutes.
  3. In a medium bowl, mix together the chopped spinach, ricotta cheese, salt, pepper, and half of the saffron mixture.
  4. Lay the chicken breasts flat on a cutting board, cover with plastic wrap, and pound to an even thickness.
  5. Spread the spinach and ricotta mixture evenly over each chicken breast, then roll them up tightly and secure with toothpicks if necessary.
  6. In a skillet, heat olive oil over medium heat and sear the chicken roulades until golden brown on all sides, about 3-4 minutes per side.
  7. Transfer the chicken to a baking dish and bake for 20 minutes, or until the internal temperature reaches 165°F (75°C).
  8. In the same skillet, add minced garlic and sauté for 1 minute. Pour in the heavy cream and the remaining saffron mixture, stirring until well combined.
  9. Let the sauce simmer for about 5 minutes until slightly thickened. Season with salt and pepper to taste.
