Ingredients

INGREDIENTS

  • 2 medium sweet potatoes
  • 1 cup canned black beans, rinsed and drained
  • 1/2 cup Greek yogurt
  • 1 tablespoon lime juice
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • Olive oil for frying
  • Fresh cilantro for garnish
  • Sliced jalapeños for topping (optional)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Slice the sweet potatoes into thin rounds, about 1/4 inch thick.
  3. Toss the sweet potato slices with olive oil, salt, and pepper then arrange them in a single layer on a baking sheet.
  4. Bake for 20-25 minutes, flipping halfway, until golden and crispy.
  5. While the sweet potatoes are baking, prepare the spicy black bean cream by blending black beans, Greek yogurt, lime juice, chili powder, cumin, salt, and pepper until smooth.
  6. Once the sweet potato rounds are crispy, remove them from the oven and stack them in layers with a dollop of black bean cream in between each layer.
  7. Drizzle additional black bean cream on top, and garnish with fresh cilantro and sliced jalapeños if desired.
  8. Serve immediately and enjoy your nacho stackers!

Notes

Tip: For an extra kick, add some cayenne pepper to the black bean cream or use spicy yogurt instead!

For the best texture, make sure to slice the sweet potatoes evenly to ensure they cook at the same rate. You can also experiment with different toppings like avocado, jalapeños, or cheese according to your preference.

If you’re looking for a healthier option, use oven-baked sweet potato slices instead of frying. To store leftovers, keep the components separate to maintain their crispiness, and reheat in the oven for a few minutes before serving.
