  • 2 cups water or vegetable broth
  • 1 orange, segmented
  • 1 grapefruit, segmented
  • 1/2 cup chopped fresh parsley
  • 1/4 cup chopped fresh mint
  • 1 tablespoon olive oil
  • Juice of 1 lemon
  • Salt and pepper to taste
  • Optional toppings: sliced almonds, chia seeds, or feta cheese

Instructions

  1. Rinse the quinoa under cold water to remove any bitterness.
  2. In a medium saucepan, combine the quinoa and water or vegetable broth. Bring to a boil, then reduce heat to low, cover, and simmer for about 15 minutes until the quinoa is fluffy and the liquid is absorbed.
