Ingredients

INGREDIENTS

  • 2 ripe mangoes, peeled and diced
  • 1 cup coconut milk
  • 1/2 cup sugar
  • 1 teaspoon vanilla extract
  • Juice of 1 lime
  • Pinch of salt

Instructions

  1. Puree the diced mangoes in a blender until smooth. Add lime juice, salt, and half of the sugar. Blend again until combined.
  2. In a separate bowl, whisk together the coconut milk, remaining sugar, and vanilla extract until sugar is dissolved and mixture is smooth.
  3. Pour both mixtures into separate containers and freeze for about 2-3 hours, or until partially set.
  4. Once the sorbets are partially frozen, use a fork to fluff each mixture, then layer them into serving cups in alternating colors, swirling gently to create a marbled effect.
  5. Return the cups to the freezer for another hour to firm up before serving.

Notes

Tip: For an extra tropical touch, garnish with fresh mint leaves or shredded coconut before serving.

For a smoother texture, make sure to puree the mango completely until there are no lumps. If you prefer a sweeter sorbet, adjust the sugar according to your taste before freezing. You can also replace coconut milk with almond milk for a different flavor profile.

These sorbet cups can be stored in the freezer in an airtight container for up to one week. Just let them sit at room temperature for a few minutes before serving to soften slightly for easy scooping.
