  • 1/4 cup green beans, cut into 1-inch pieces
  • 1/4 cup roasted peanuts, crushed

  • 1-2 Thai bird chilies, minced (optional)

Instructions

  1. Shred the green papaya and carrots using a grater or food processor.
  2. In a large bowl, combine the shredded papaya, carrots, cherry tomatoes, and green beans.
  3. In a separate bowl, whisk together lime juice, fish sauce, palm sugar, and minced chilies until the sugar dissolves.
  4. Pour the dressing over the salad mixture and toss well to combine.
  5. Garnish with crushed peanuts and cilantro before serving.

Notes

Tip: For a vegetarian version, substitute fish sauce with soy sauce or tamari.

For an extra kick, add sliced Thai bird chilies to the dressing. If you can’t find green papaya, shredded carrots or zucchini can make a great substitute. This salad is best enjoyed fresh but can be stored in the refrigerator for a short time. To keep the papaya from becoming soggy, add the dressing just before serving.
