Notes
Storage: This gazpacho can be stored in an airtight container in the fridge for up to 2 days. The avocado cream is best made fresh, but can be prepared a few hours ahead of serving.
To enhance the flavors of your gazpacho, let it chill in the fridge for at least two hours before serving. This allows the ingredients to meld beautifully. If you prefer a milder version, reduce the chili or omit it entirely.
For added texture, consider garnishing with crunchy toasted peanuts or fresh herbs like cilantro or mint. This dish can also be made a day in advance, making it perfect for meal prep or entertaining.
