Ingredients

INGREDIENTS

  • 2 cups Bomba rice
  • 4 cups seafood broth
  • 1/2 teaspoon saffron threads
  • 200g chorizo, sliced
  • 300g mixed seafood (shrimp, mussels, calamari)
  • 1 cup frozen peas
  • 1 red bell pepper, diced
  • 1 onion, finely chopped
  • 4 cloves garlic, minced
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste
  • Olive oil for cooking
  • Fresh parsley for garnish
  • Lemon wedges for serving

Instructions

  1. Heat olive oil in a large paella pan over medium heat.
  2. Add the chorizo slices and cook until browned, about 3-4 minutes.
  3. Stir in the onion, bell pepper, and garlic; sauté until softened, about 5 minutes.
  4. Sprinkle in the smoked paprika and saffron, stirring to combine.
  5. Add the rice, stirring for 2 minutes to toast it lightly.
  6. Pour in the seafood broth and season with salt and pepper; bring to a boil.
  7. Reduce heat to low and simmer for 15 minutes, without stirring, until the rice is mostly cooked.
  8. Nestle the mixed seafood and peas into the rice; cover and cook for an additional 5-7 minutes until the seafood is cooked through.
  9. Remove from heat and let rest for 5 minutes, covered.
  10. Garnish with parsley and serve with lemon wedges. Enjoy!

Notes

Tip: Use high-quality saffron for the best flavor and color. If unavailable, turmeric can be used as a color substitute, but the flavor will differ.

When making paella, it’s important to use the right rice. Bomba or Calasparra rice are ideal as they absorb flavors without becoming mushy. If you can’t find these, Arborio rice can be a suitable substitute.

For an extra layer of flavor, consider adding a splash of white wine or seafood broth instead of water. Also, feel free to customize the seafood according to your preference—mussels, clams, or even squid can enhance the dish.

Store leftovers in an airtight container in the fridge for up to 3 days. Reheat gently on the stove with a splash of broth to restore moisture. Serve with a wedge of lemon for an added fresh touch!

Ingredients

INGREDIENTS

  • 1 pound large shrimp, peeled and deveined
  • 1/4 cup fresh lime juice
  • 1/4 cup chopped fresh cilantro
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1/2 teaspoon cumin
  • Salt and pepper to taste
  • 8 tostada shells
  • 1 ripe avocado
  • 1 tablespoon sour cream
  • 1 tablespoon lime juice
  • Salt to taste
  • Chopped cilantro for garnish

Instructions

  1. In a medium bowl, combine lime juice, cilantro, olive oil, garlic powder, cumin, salt, and pepper.
  2. Add the shrimp to the marinade and toss to coat. Let it marinate for 10 minutes.
  3. While the shrimp marinates, prepare the avocado spread by mashing the avocado with sour cream, lime juice, and salt until smooth.
  4. Heat a skillet over medium-high heat and cook the marinated shrimp for 3-4 minutes until they are pink and opaque.
  5. To assemble, spread a generous layer of avocado spread on each tostada shell, then top with cooked shrimp.
  6. Garnish with chopped cilantro and serve immediately. Enjoy!

Notes

Tip: Feel free to add sliced jalapeños or diced tomatoes for extra flavor and crunch.

For extra crunch, try using baked tostadas instead of fried ones. You can also substitute the shrimp with grilled chicken or black beans for a different protein option. If you’re short on time, pre-made guacamole works well as a quick alternative to the avocado spread.

These tostadas can be served cold or warm, making them a versatile dish. Leftovers can be stored in an airtight container in the refrigerator for up to two days, but it’s best to assemble them just before serving for maximum freshness.

  4. Warm the corn tortillas in a dry skillet for about 30 seconds on each side to make them pliable.
  5. Spoon about 2 tablespoons of the sweet potato mixture onto one side of each tortilla. Roll tightly and place seam-side down on a baking sheet lined with parchment paper.

Ingredients

INGREDIENTS

  • 1 head cauliflower, cut into bite-sized florets
  • 1 cup flour
  • 1 cup water
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup buffalo sauce
  • 1 tablespoon olive oil
  • 1/2 cup sour cream
  • 1/2 cup mayonnaise
  • 1 tablespoon dried dill
  • 1 tablespoon chopped chives
  • 1 tablespoon lemon juice
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 450°F (230°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, whisk together flour, water, garlic powder, onion powder, smoked paprika, salt, and black pepper until smooth.
  3. Dip each cauliflower floret into the batter and place on the prepared baking sheet, ensuring they are spaced out.
  4. Bake the cauliflower for 20 minutes or until they start to crisp up and turn golden brown.
  5. While the cauliflower is baking, mix the buffalo sauce and olive oil in a bowl.
  6. Once the cauliflower is baked, toss them in the buffalo sauce mixture until evenly coated.
  7. Return the coated cauliflower to the baking sheet and bake for an additional 5 minutes.
  8. To make the ranch dip, combine sour cream, mayonnaise, dill, chives, lemon juice, and season with salt and pepper.
  9. Serve the crispy buffalo cauliflower bites hot with the creamy ranch dip on the side.

Notes

For a vegan-friendly option, substitute the sour cream and mayonnaise with plant-based alternatives.

For extra crispiness, consider double coating the cauliflower bites: first in the batter, then in breadcrumbs before baking. If you’re short on time, you can buy pre-made ranch dip; however, homemade ranch offers a fresher taste and can be customized with your favorite herbs.

To store leftovers, keep them in an airtight container in the fridge for up to 3 days. Reheat in the oven to restore some of that original crunch!

Ingredients

INGREDIENTS

  • 1/2 cup chia seeds
  • 2 cups almond milk (or any milk of choice)
  • 1/4 cup pure maple syrup
  • 1 teaspoon vanilla extract
  • 1 cup mixed berries (strawberries, blueberries, raspberries)
  • 1/4 cup granola (optional for topping)

Instructions

  1. In a medium bowl, combine chia seeds, almond milk, maple syrup, and vanilla extract. Stir well to avoid clumps.
  2. Let the mixture sit for about 10 minutes, then stir again to ensure the chia seeds are evenly distributed.
  3. Cover the bowl and refrigerate for at least 2 hours or overnight, until the chia pudding thickens.
  4. Once thickened, layer the chia pudding into serving glasses or bowls, alternating with layers of mixed berries.
  5. Top each parfait with a sprinkle of granola, if desired, and a few extra berries for garnish. Serve immediately or store in the fridge until ready to enjoy.

Notes

Tip: For a sweeter pudding, adjust the maple syrup to taste or add a little more vanilla extract for extra flavor.

For a quicker version, use pre-made chia pudding available at many grocery stores. You can also substitute the maple syrup with honey or agave for a different flavor profile. If you’re looking for a lower-calorie option, consider using a sugar-free syrup.

Feel free to mix and match your favorite berries based on what’s in season or available. Strawberries, blueberries, and raspberries work best, but blackberries and sliced peaches are delicious alternatives too. Store any leftovers in an airtight container for up to 3 days in the fridge.

  • 2 teaspoons lime zest
