Ingredients

TO ASSEMBLE SPRITZ
- 4 cups sparkling water or club soda, chilled
- 1 cup fresh pomelo segments, peeled
- Ice cubes
- Fresh mint sprigs, for garnish
- Thin pomelo or lime slices, for garnish
Instructions
- Combine sugar, water, hibiscus petals, and sliced ginger in a small saucepan over medium heat.
- Bring mixture to a gentle simmer, stirring until sugar dissolves. Simmer for 5 minutes to infuse flavors.
- Remove from heat and stir in honey or agave if using. Let syrup cool to room temperature, then strain into a clean jar. Discard solids.
- Fill four glasses with ice and divide pomelo segments among them.
