Ingredients

INGREDIENTS

  • 1/2 cup unsalted butter
  • 1 cup dark chocolate (70% cocoa or higher)
  • 1/2 cup powdered sugar
  • 2 large eggs
  • 2 large egg yolks
  • 1 teaspoon vanilla extract
  • 1/4 cup all-purpose flour
  • 1 tablespoon brewed espresso
  • Pinch of salt

Instructions

  1. Preheat your oven to 425°F (220°C). Grease four ramekins with butter and dust with flour, then set aside.
  2. In a medium saucepan, melt the butter and dark chocolate together over low heat, stirring until smooth. Remove from heat and let cool slightly.
  3. Whisk in the powdered sugar until well combined, then add the eggs and egg yolks, one at a time, along with the vanilla extract, stirring until fully incorporated.
  4. Gently fold in the flour, brewed espresso, and a pinch of salt until just combined. Be careful not to overmix.
  5. Divide the batter evenly among the prepared ramekins, filling each about 3/4 full.
  6. Place the ramekins on a baking tray and bake in the preheated oven for 10-12 minutes, or until the edges are firm but the center is still soft.
  7. Remove from the oven and let sit for 1 minute. Carefully invert each ramekin onto a dessert plate, allowing the cake to release. Serve immediately.

Notes

Storage: These lava cakes are best enjoyed fresh, but you can store any leftovers in the fridge for up to 2 days. Reheat in the oven for a few minutes to regain that molten center.

For best results, use a high-quality dark chocolate with at least 70% cocoa content. If you prefer a lighter cake, you can substitute some of the chocolate with cocoa powder. Be careful not to overbake the cakes, as this will result in a dry texture rather than the desired molten center.

These lava cakes can be prepared in advance and stored in the fridge before baking. Just add a couple of extra minutes to the baking time if they go straight from the fridge to the oven. Serve with a scoop of vanilla ice cream or a dollop of whipped cream for an extra touch of decadence!
