Ingredients
FOR THE EGGPLANT STEAKS
- 2 large eggplants, cut into ½-inch slices
- 1 cup millet, rinsed
- ½ teaspoon smoked paprika
- ½ teaspoon garlic powder
- Salt and pepper, to taste
- 2 tablespoons olive oil
FOR THE HARISSA LABNEH
- 1 cup labneh
- 1–2 tablespoons red harissa paste, to taste
- 1 teaspoon lemon juice
- Pinch of salt
FOR THE PISTACHIO DUKKAH
- ½ cup shelled pistachios
- 2 tablespoons sesame seeds
- 2 tablespoons coriander seeds, toasted and crushed
- 1 teaspoon cumin seeds, toasted
- Pinch of salt
Instructions
- Preheat the oven to 425°F (220°C). Spread the rinsed millet on a baking sheet and bake, stirring once, until golden and toasted, about 10–12 minutes. Let cool.
- In a dry skillet over medium heat, toast sesame, coriander, and cumin seeds until fragrant, about 2 minutes. Combine seeds with pistachios and salt in a food processor; pulse until coarse and set aside.
- Meanwhile, whisk together labneh, harissa paste, lemon juice, and a pinch of salt in a small bowl; taste and adjust spice. Cover and refrigerate.
- Sprinkle eggplant slices with salt and let rest on a wire rack for 15 minutes. Pat dry with paper towels.
- In a shallow dish, mix cooled millet with smoked paprika, garlic powder, salt, and pepper. Brush both sides of each eggplant slice with olive oil and press into the millet mixture to coat evenly.
- Heat a tablespoon of olive oil in a large skillet over medium-high heat. Working in batches, cook eggplant steaks until golden and crisp, 3–4 minutes per side. Transfer to a baking sheet and finish in the oven until tender, about 5 minutes.
- To serve, smear a generous spoonful of harissa labneh on each plate, top with an eggplant steak, and sprinkle with pistachio dukkah.
- Garnish with extra dukkah and a drizzle of olive oil, then serve immediately.
