Ingredients

FRITTERS

  • 2 cups fresh sweet corn kernels (about 3 ears)
  • 3/4 cup all-purpose flour
  • 1 large egg
  • 1/4 cup whole milk
  • 2 tablespoons chopped chives
  • 1 teaspoon baking powder
  • 1/2 teaspoon freshly ground black pepper
  • 1/2 teaspoon fine sea salt
  • 2 tablespoons unsalted butter or oil for frying
  • Truffle salt for dusting

CHARRED SCALLION CREAM

  • 1/2 cup sour cream
  • 2 tablespoons mayonnaise
  • 4 scallions, halved lengthwise
  • 1 small garlic clove, minced
  • 1 teaspoon lemon juice
  • Salt and pepper to taste

Instructions

  1. In a bowl, whisk together flour, baking powder, salt, and pepper.
  2. Stir in the egg and milk until a smooth batter forms, then fold in corn kernels and chives.
  3. Heat butter or oil in a large skillet over medium-high heat.
  4. Spoon heaping tablespoons of batter into the hot oil, spacing fritters about 1 inch apart.
  5. Cook until golden brown, about 2–3 minutes per side, then transfer to a paper towel–lined plate.
  6. While fritters fry, char scallions: heat a small skillet over high heat and sear scallion halves until deeply browned, about 2 minutes per side.
  7. Chop cooled scallions and combine with sour cream, mayonnaise, garlic, and lemon juice. Season with salt and pepper.
  8. Serve fritters warm, dusted lightly with truffle salt, alongside charred scallion cream.
