INGREDIENTS

  • 1 pound shrimp, peeled and deveined
  • 2 tablespoons olive oil
  • 1 teaspoon lime zest
  • 2 tablespoons lime juice
  • 1/4 cup fresh cilantro, chopped
  • Salt and pepper to taste
  • 1 ripe avocado
  • 1 tablespoon lime juice (for guacamole)
  • Salt to taste
  • Tortilla chips or cucumber slices for serving

Instructions

  1. In a mixing bowl, combine shrimp, olive oil, lime zest, lime juice, chopped cilantro, salt, and pepper. Toss to coat and let marinate for 15 minutes.
  2. Heat a skillet over medium heat and add the marinated shrimp. Cook for 3-4 minutes on each side until shrimp are pink and opaque.
  3. While the shrimp cook, mash the avocado in a bowl and mix with lime juice and salt to taste until creamy.
  4. Once the shrimp are cooked, let them cool slightly before assembling the bites.
  5. On each tortilla chip or cucumber slice, add a spoonful of guacamole and top it with a cooked shrimp. Garnish with extra cilantro if desired.
  6. Serve immediately and enjoy the fresh flavors!

Notes

Storage: Keep leftover shrimp and guacamole in separate airtight containers in the fridge for up to 2 days. Reheat shrimp before serving.

For the best flavor, marinate the shrimp for at least 30 minutes before cooking. You can also grill the shrimp for a smoky flavor instead of sautéing. If you’re short on time, store-bought guacamole works in a pinch, but homemade brings the best taste!

To keep the bites fresh, assemble them just before serving. These can be made a few hours in advance—just keep the shrimp and guacamole separate until ready to serve. Enjoy with tortilla chips for an extra crunch!
