Ingredients
INGREDIENTS
- 1 lb boneless, skinless chicken thighs, cut into 1-inch pieces
- 2 tablespoons fresh rosemary, finely chopped
- 2 lemons, juiced and zested
- 3 tablespoons olive oil
- 3 cloves garlic, minced
- Salt and pepper, to taste
- 1 ripe avocado
- 1/2 cup Greek yogurt
- 1 tablespoon lime juice
- 1/4 teaspoon garlic powder
Instructions
- In a bowl, combine the chicken pieces, chopped rosemary, lemon juice and zest, olive oil, minced garlic, salt, and pepper. Mix well and marinate in the refrigerator for at least 1 hour.
- Thread the marinated chicken pieces onto skewers, leaving a little space between each piece for even cooking.
- Preheat the grill to medium-high heat. Grill the skewers for about 10-12 minutes, turning occasionally, until the chicken is cooked through and has nice grill marks.
- While the chicken is grilling, prepare the creamy avocado sauce by blending the avocado, Greek yogurt, lime juice, garlic powder, and a pinch of salt until smooth and creamy.
- Once cooked, remove the skewers from the grill and let them rest for a few minutes.
- Serve the chicken skewers warm with the creamy avocado sauce on the side for dipping. Garnish with additional rosemary if desired.
Notes
Tip: For extra flavor, try adding some red pepper flakes to the marinade for a spicy kick.
For best results, marinate the chicken for at least 1 hour, but overnight is ideal for maximum flavor. If you prefer a plant-based option, try substituting the chicken with firm tofu or tempeh, marinating it in the same zesty mixture.
Store any leftover avocado sauce in an airtight container in the refrigerator for up to 2 days. If it starts to brown, simply stir in a little lime juice to revive its vibrancy. These skewers can also be prepared in advance and reheated on the grill or in a skillet.
