- 4 large bell peppers (any color)
- 1 cup quinoa, rinsed
- 2 cups vegetable broth
- 1 can (15 oz) black beans, drained and rinsed
- 1 cup corn (fresh, frozen, or canned)
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 teaspoon cumin
- 1 teaspoon chili powder
- Juice of 1 lime
- 1/4 cup fresh cilantro, chopped
- Salt and pepper to taste
- Olive oil for cooking
Instructions
- Preheat the oven to 375°F (190°C).
- Cut the tops off the bell peppers and remove the seeds and membranes. Place them upright in a baking dish.
- In a medium saucepan, bring the vegetable broth to a boil. Add the rinsed quinoa, reduce heat, cover, and simmer for 15 minutes or until the quinoa is fluffy and liquid is absorbed.
- In a skillet, heat a drizzle of olive oil over medium heat. Sauté the diced onion and minced garlic until translucent, about 3-4 minutes.
- Stir in the cooked quinoa, black beans, corn, cumin, chili powder, lime juice, and chopped cilantro. Season with salt and pepper to taste.
- Stuff each bell pepper with the quinoa mixture, pressing down gently to pack it in.
- Cover the dish with foil and bake for 25-30 minutes, until the peppers are tender.
- Remove the foil for the last 5 minutes of baking to allow the tops to brown slightly.
