Ingredients

INGREDIENTS

  • 1 medium cauliflower, cut into florets
  • 1/2 cup all-purpose flour
  • 1/2 cup cornmeal
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup sweet chili sauce
  • 1 large egg
  • 1 tablespoon lime zest
  • 2 tablespoons lime juice
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • Oil for frying

Instructions

  1. Steam the cauliflower florets until tender, about 5-7 minutes, then let cool slightly.
  2. In a large mixing bowl, combine the flour, cornmeal, Parmesan cheese, garlic powder, onion powder, salt, and pepper.
  3. Add the cooled cauliflower, sweet chili sauce, egg, lime zest, and lime juice to the dry mixture. Stir until well combined.
  4. Heat oil in a large skillet over medium heat. Once hot, drop spoonfuls of the mixture into the oil, flattening them slightly into fritters.
  5. Fry for about 3-4 minutes on each side, or until golden brown and crispy. Remove and drain on paper towels.
  6. Serve hot, garnished with lime wedges or fresh cilantro.

Notes

Tip: For a lighter version, you can bake these fritters at 400°F (200°C) for about 20 minutes, flipping halfway through.

To ensure your fritters are extra crispy, make sure to drain any excess moisture from the cauliflower after steaming. You can also experiment with different herbs and spices to customize the flavor to your liking.

If you want to keep these fritters gluten-free, use almond flour or a gluten-free flour blend as a substitute. Store any leftovers in an airtight container in the refrigerator for up to 3 days; reheat them in the oven to maintain their crispiness.
