  • 1 cup shredded cabbage
  • 1 red bell pepper, thinly sliced
  • 1 green bell pepper, thinly sliced
  • 1/2 cup fresh cilantro, chopped
  • 1 lime, juiced
  • 1 tablespoon soy sauce
  • 1 tablespoon sesame oil
  • 1 package spring roll wrappers
  • Cooking spray or oil for spraying

Instructions

  1. In a large bowl, combine shredded carrots, cabbage, bell peppers, cilantro, lime juice, soy sauce, and sesame oil. Mix well to combine.
  2. Lay a spring roll wrapper on a flat surface, with one corner facing you. Place about 2 tablespoons of the vegetable mixture near the bottom corner.
  3. Fold the bottom corner over the filling, then fold the sides in and roll tightly. Seal the edge with a little water. Repeat with remaining wrappers and filling.
