  • 4 chicken thighs, skin-on and bone-in
  • Juice and zest of 2 limes
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 teaspoon ground cumin
  • Salt and pepper to taste
  • 2 pounds potatoes, peeled and cubed
  • 1/2 cup heavy cream
  • 4 tablespoons butter
  • 1 head of garlic, roasted

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a bowl, mix lime juice, lime zest, olive oil, minced garlic, cumin, salt, and pepper. Add chicken thighs to the marinade and let them sit for at least 30 minutes.
  3. While the chicken is marinating, boil the potatoes in salted water until fork-tender, about 15-20 minutes.
