  • 1 cup all-purpose flour
  • 1/4 teaspoon salt
  • 1 teaspoon sugar
  • 4 large eggs
  • 1 cup heavy cream
  • 1/4 cup powdered sugar
  • Zest of 1 lemon
  • 1 tablespoon fresh lavender (or 1 teaspoon dried culinary lavender)
  • 2 tablespoons honey

Instructions

  1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a saucepan, combine water, butter, salt, and sugar; bring to a boil over medium heat.
  3. Add the flour all at once and stir vigorously until the mixture forms a ball and pulls away from the sides of the pan.
  4. Remove from heat and let cool for 5 minutes, then beat in the eggs one at a time until the dough is smooth and glossy.
  5. Using a pastry bag, pipe small rounds (about 1.5 inches in diameter) onto the prepared baking sheet.
  6. Bake for 20-25 minutes or until the puffs are golden brown and hollow inside. Turn off the oven and let them cool with the door slightly ajar.
