Ingredients

INGREDIENTS

  • 1 cup Arborio rice
  • 4 cups low-sodium chicken or vegetable broth
  • 1/2 cup dry white wine
  • 1/2 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 1/2 lb shrimp, peeled and deveined
  • 1/2 lb asparagus, trimmed and cut into 1-inch pieces
  • 1/4 cup grated Parmesan cheese
  • 1/4 teaspoon saffron threads
  • 1 tablespoon lemon zest
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)

Instructions

  1. Heat the broth in a saucepan and keep it warm over low heat.
  2. In a large skillet, heat olive oil over medium heat. Add onions and garlic, sauté until translucent.
  3. Add the Arborio rice to the skillet, stirring for about 2 minutes until lightly toasted.
  4. Pour in the white wine and stir until absorbed.
  5. Start adding the warm broth one ladle at a time, stirring frequently and allowing the rice to absorb the liquid before adding more.
  6. After about 15 minutes, stir in the saffron threads and continue to add broth until the rice is creamy and al dente, about 20 minutes total.
  7. In the last 5 minutes of cooking, add the shrimp and asparagus, stirring gently until cooked through.
  8. Remove from heat and stir in the lemon zest and Parmesan cheese, seasoning with salt and pepper to taste.
  9. Serve hot, garnished with fresh parsley if desired.

Notes

Tip: For a creamier risotto, you can add a bit more broth or a splash of cream just before serving.

For best results, use Arborio rice, which is specially designed for risotto due to its high starch content. If you don’t have saffron, you can substitute it with a pinch of turmeric for color, but the flavor will differ. Be cautious not to overcook the shrimp, as they can become rubbery; cook just until they’re pink and opaque.

Store leftover risotto in an airtight container in the fridge for up to 2 days. Reheat gently on the stove with a splash of broth to restore its creaminess.
