  • 1 tablespoon olive oil
  • 1 onion, diced
  • 2 garlic cloves, minced
  • 1 inch ginger, grated
  • 2 medium sweet potatoes, diced
  • 1 can (15 oz) chickpeas, drained and rinsed
  • 1 can (14 oz) coconut milk
  • 1 cup vegetable broth
  • 1 lime, juiced and zested
  • 1 teaspoon cumin
  • 1 teaspoon turmeric
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. Heat the olive oil in a skillet over medium heat. Add the diced onion and sauté until translucent, about 5 minutes.
  2. Stir in the minced garlic and grated ginger, and cook for another minute until fragrant.
  3. Transfer the onion mixture to the slow cooker or Instant Pot. Add the diced sweet potatoes, chickpeas, coconut milk, vegetable broth, lime juice, lime zest, cumin, turmeric, salt, and pepper.
