- 2 tablespoons olive oil
- 2 teaspoons lemon zest
- Juice of 2 lemons

- 1 teaspoon salt
- 6-8 taco-sized tortillas

Instructions
- Rub the turkey breast with olive oil, lemon zest, lemon juice, minced garlic, oregano, thyme, black pepper, and salt.
- Place the seasoned turkey in the slow cooker or Instant Pot.
- For slow cooking: Cover and cook on low for 6-8 hours or high for 3-4 hours until the turkey is tender and easily shredded.
- For Instant Pot: Seal the lid and cook on high pressure for 30 minutes. Allow natural release for 10 minutes before quick releasing any remaining pressure.
- Once cooked, shred the turkey using two forks and mix it with the juices in the cooker.
- Warm the tortillas in a dry skillet or microwave until pliable.
- Assemble the tacos by placing the pulled turkey in tortillas and adding your favorite toppings.

Note: If preferred, you can substitute the turkey breast with chicken breasts for a different flavor. You can also adjust the herbs to suit your taste.
