Ingredients
INGREDIENTS
- 1 1/2 cups chocolate graham cracker crumbs
- 1/4 cup sugar
- 1/2 cup unsalted butter, melted
- 2 cups silken tofu, drained
- 1 cup cream cheese, softened
- 1 cup Nutella
- 1/2 cup granulated sugar
- 1/4 cup cocoa powder
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
- 1/2 cup chocolate chips, melted
Instructions
- Preheat the oven to 350°F (175°C).
- In a mixing bowl, combine chocolate graham cracker crumbs, sugar, and melted butter. Mix until well combined.
- Press the crumb mixture into the bottom of a 9-inch springform pan to form the crust. Bake for 10 minutes, then set aside to cool.
- In a blender or food processor, blend the silken tofu, cream cheese, Nutella, sugar, cocoa powder, vanilla extract, and salt until smooth and creamy.
- Pour half of the cheesecake mixture over the cooled crust, then drizzle half of the melted chocolate chips on top.
- Spoon the remaining cheesecake mixture over and use a toothpick or knife to swirl the melted chocolate chips into the batter gently, creating a marbled effect.
- Bake for 50 minutes, or until the center is set but still slightly jiggly.
- Turn off the oven and leave the cheesecake inside for an additional 10 minutes. Remove from the oven and allow to cool completely before refrigerating for at least 4 hours.
- Once chilled, remove the cheesecake from the springform pan, slice, and serve.
Notes
Storage: Store any leftover cheesecake in an airtight container in the refrigerator for up to 3 days. It can also be frozen for up to 2 months, simply thaw before serving.
For the best results, allow the cheesecake to chill in the refrigerator for at least 4 hours, or overnight if possible. This will help the flavors meld and the texture to set properly. If you’re looking for a gluten-free option, make sure to use gluten-free cookies for the crust.
Feel free to customize this recipe by adding a layer of whipped cream on top or sprinkling crushed hazelnuts over the glaze for added crunch and flavor.
