Ingredients

  • 1 1/2 cups chocolate graham cracker crumbs
  • 1/4 cup sugar
  • 1/2 cup unsalted butter, melted
  • 2 cups silken tofu, drained
  • 1 cup cream cheese, softened
  • 1 cup Nutella
  • 1/2 cup granulated sugar
  • 1/4 cup cocoa powder
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1/2 cup chocolate chips, melted

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a mixing bowl, combine chocolate graham cracker crumbs, sugar, and melted butter. Mix until well combined.
  3. Press the crumb mixture into the bottom of a 9-inch springform pan to form the crust. Bake for 10 minutes, then set aside to cool.
  4. In a blender or food processor, blend the silken tofu, cream cheese, Nutella, sugar, cocoa powder, vanilla extract, and salt until smooth and creamy.
  5. Pour half of the cheesecake mixture over the cooled crust, then drizzle half of the melted chocolate chips on top.
  6. Spoon the remaining cheesecake mixture over and use a toothpick or knife to swirl the melted chocolate chips into the batter gently, creating a marbled effect.
  7. Bake for 50 minutes, or until the center is set but still slightly jiggly.
  8. Turn off the oven and leave the cheesecake inside for an additional 10 minutes. Remove from the oven and allow to cool completely before refrigerating for at least 4 hours.
  9. Once chilled, remove the cheesecake from the springform pan, slice, and serve.

Notes

Storage: Store any leftover cheesecake in an airtight container in the refrigerator for up to 3 days. It can also be frozen for up to 2 months, simply thaw before serving.
