  • 1 cup mango, diced
  • 1 cup coconut milk (or almond milk)
  • 2 tablespoons chia seeds
  • 1 tablespoon honey or maple syrup (optional)

  • Pinch of salt
  • Fresh mint leaves for garnish (optional)

Instructions

  1. In a mixing bowl, combine rolled oats, chia seeds, and salt.
  2. In another bowl, mix coconut milk, honey (if using), and vanilla extract.
  3. Pour the coconut milk mixture over the dry ingredients and stir well.
  4. Fold in the sliced banana and diced mango, reserving a few pieces for topping.
  5. Divide the mixture into two jars or containers and refrigerate overnight (or at least 4 hours).
