  • 1 large head of cauliflower
  • 3 tablespoons harissa paste
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 1/4 cup tahini
  • Juice of 1 lemon
  • 2 tablespoons water (more if needed)
  • Fresh parsley for garnish

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Remove the leaves from the cauliflower and trim the stem, keeping the head intact. Slice the cauliflower into 3/4-inch thick steaks.
  3. In a small bowl, mix the harissa paste, olive oil, salt, and pepper until well combined.
  4. Brush the harissa mixture generously over both sides of the cauliflower steaks.
  5. Place the cauliflower steaks on a baking sheet lined with parchment paper and roast for about 20-25 minutes, flipping halfway through, until golden brown and tender.
  6. While the cauliflower roasts, whisk together the tahini, lemon juice, water, and a pinch of salt in a bowl until smooth. Adjust the water for desired consistency.
