Crispy Almond-Orange Glazed Madeleines

These crispy almond-orange glazed madeleines are a delightful twist on a classic French treat. Each bite offers a perfect balance of buttery richness and refreshing citrus, making them a perfect accompaniment to your afternoon tea or coffee.

The key technique lies in the unique aluminum madeleine mold, which gives these cookies their signature shell shape and crisp edges. The orange glaze not only adds a pop of color but also infuses the madeleines with a zesty brightness that complements the nuttiness of the almond.

Ingredients

INGREDIENTS

  • 2 large eggs
  • 1/2 cup granulated sugar
  • 1 teaspoon almond extract
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, melted
  • Zest of 1 orange
  • 1/2 cup powdered sugar
  • 2 tablespoons fresh orange juice
  • 1/4 cup sliced almonds

Instructions

  1. Preheat the oven to 375°F (190°C) and grease the madeleine molds with butter or non-stick spray.
  2. In a mixing bowl, whisk together eggs and granulated sugar until pale and frothy.
  3. Add almond extract, melted butter, and orange zest, and mix well until combined.
  4. In a separate bowl, whisk together flour, baking powder, and salt. Gradually fold the dry ingredients into the wet mixture until just combined.
  5. Spoon the batter into the prepared madeleine molds, filling each one about 3/4 full.
  6. Sprinkle sliced almonds on top of the batter in each mold.
  7. Bake for 10-15 minutes or until the edges are golden brown and the centers spring back when lightly touched.
  8. Remove from the oven and let cool in the pan for 5 minutes before transferring to a wire rack to cool completely.
  9. In a small bowl, mix powdered sugar with fresh orange juice until smooth to create the glaze.
  10. Dip the cooled madeleines into the glaze, allowing excess to drip off, and let set on a wire rack.

Notes

Tip: For an extra burst of flavor, consider adding a few drops of orange blossom water to the glaze.

For best results, allow the madeleines to cool completely before glazing. This will help the glaze set properly and adhere to the cookies. If you don’t have almond extract, feel free to substitute it with vanilla extract for a different flavor profile.

These madeleines can be stored in an airtight container at room temperature for up to three days, but they are best enjoyed fresh. If you want to freeze them, do so before glazing, and simply glaze once thawed.
