  • 4 cups whole milk
  • 1/4 cup sugar
  • 1/2 teaspoon saffron threads
  • 2 tablespoons rosewater
  • 1/2 teaspoon salt
  • 1 tablespoon cornstarch
  • 1 tablespoon water
  • 1 premade tart shell (9-inch)
  • 1/4 cup crushed pistachios (for garnish)

Instructions

  1. Rinse the Arborio rice under cold water until the water runs clear.
  2. In a medium saucepan, combine the rice and milk. Cook over medium heat, stirring frequently until it begins to simmer.
  3. Add the sugar, saffron, and salt. Reduce heat to low and cook for about 30-40 minutes, stirring often, until the rice is tender and the mixture is creamy.
  4. In a small bowl, mix the cornstarch with water to create a slurry. Stir this into the rice pudding mixture and cook for an additional 5 minutes until thickened.
  5. Remove from heat and stir in rosewater. Allow the mixture to cool slightly.
  6. Pour the rice pudding filling into the prepared tart shell, smoothing the top with a spatula.
  7. Chill in the refrigerator for at least 2 hours before serving.
