  • 2 tablespoons olive oil
  • 1/4 cup peanut butter
  • 2 tablespoons soy sauce (or tamari for gluten-free)
  • 1 tablespoon sriracha (adjust to taste)
  • 1 tablespoon honey (or agave for vegan)
  • 1 tablespoon lime juice
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste
  • 1/2 cup plain yogurt (or dairy-free yogurt)
  • 1 small cucumber, finely diced
  • 1 tablespoon chopped fresh dill or mint
  • Juice of 1/2 lime, for the dip
  • Salt to taste

Instructions

  1. Preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. In a large bowl, toss cauliflower florets with olive oil, salt, and pepper until well coated.
  3. In a separate bowl, whisk together the peanut butter, soy sauce, sriracha, honey, lime juice, and garlic powder until smooth.
  4. Add the roasted cauliflower to the peanut sauce and toss until all pieces are evenly coated.
