Ingredients

INGREDIENTS

  • 8 rice paper wrappers
  • 1 cup shredded red cabbage
  • 1 cup shredded carrots
  • 1 cup sliced bell peppers (various colors)
  • 1 cup cucumber, julienned
  • 1/2 cup fresh mint leaves
  • 1/2 cup fresh cilantro leaves
  • 1 avocado
  • 2 tablespoons lime juice
  • 1 tablespoon tahini (optional)
  • Salt to taste
  • Water for soaking rice paper

Instructions

  1. Prepare all vegetables by washing and slicing them into thin strips.
  2. Fill a shallow dish with warm water. Soak one rice paper wrapper in the water for about 10-15 seconds until soft.
  3. Carefully remove the rice paper and place it on a clean surface. In the center, layer a small amount of shredded cabbage, carrots, bell peppers, cucumber, mint, and cilantro.
  4. Fold the sides of the rice paper over the filling, then roll from the bottom up to enclose the filling, forming a tight roll. Repeat with remaining wrappers and fillings.
  5. For the avocado dipping sauce, scoop the avocado into a bowl, add lime juice, tahini, and salt, then mash until smooth and creamy.
  6. Serve the spring rolls with the avocado dipping sauce on the side. Enjoy fresh!

Notes

Tip: Feel free to swap in any seasonal vegetables or add protein like shrimp or tofu for a heartier option.

When assembling your spring rolls, make sure to keep the rice paper wrappers damp but not too wet to avoid tearing. You can customize the fillings with your favorite veggies, such as bell peppers, carrots, and cucumbers.

For a protein boost, consider adding shrimp, tofu, or chicken. If you’re preparing these in advance, store the rolls in an airtight container lined with a damp paper towel to keep them fresh. The avocado dipping sauce can also be made ahead of time; just be sure to store it in an airtight container to prevent browning.
