  • 2 tablespoons olive oil
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 can (14 oz) diced tomatoes
  • 2 roasted red peppers, peeled and diced
  • 2 cups vegetable broth
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste
  • Fresh basil leaves for garnish
  • For the Basil Croutons:
  • 4 slices of bread, diced
  • 2 tablespoons olive oil
  • 1/4 cup fresh basil, chopped
  • Salt to taste

Instructions

  1. Heat olive oil in a large pot over medium heat. Add diced onion and sauté until translucent, about 5 minutes.
  2. Stir in minced garlic and cook for another minute until fragrant.
  3. Add diced tomatoes, roasted red peppers, vegetable broth, and smoked paprika. Bring to a simmer and cook for 20 minutes, stirring occasionally.
  4. Use an immersion blender to puree the soup until smooth. Alternatively, transfer to a blender in batches.
  5. Season with salt and pepper to taste. Keep warm while you prepare the croutons.
