  • 1 cup frozen peas
  • 1 head cauliflower, cut into florets
  • 1/4 cup unsweetened almond milk
  • 2 tablespoons butter (or vegan alternative)

Instructions

  1. In a medium pot, combine lentils and vegetable broth. Bring to a boil, then reduce heat and simmer for about 25 minutes or until lentils are tender.
  2. While lentils are cooking, heat olive oil in a large skillet over medium heat. Add onion and garlic; sauté until translucent, about 5 minutes.
  3. Add carrots, celery, and bell pepper to the skillet; cook for another 5-7 minutes until vegetables are softened.
  4. Stir in cumin, smoked paprika, thyme, salt, and pepper; cook for 1 minute until fragrant.
