  • 4 chicken thighs, skin-on and bone-in
  • 2 tablespoons olive oil
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon paprika
  • Salt and pepper to taste
  • 1 cup couscous
  • 1/4 cup dried apricots, chopped
  • 2 cups chicken broth
  • 1/4 cup pistachios, crushed
  • 2 tablespoons fresh parsley, chopped
  • 1 tablespoon honey (optional)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a small bowl, combine cumin, coriander, cinnamon, paprika, salt, and pepper. Rub this spice mixture all over the chicken thighs.
  3. In an oven-safe skillet, heat olive oil over medium-high heat. Add the chicken thighs skin-side down and sear until golden brown, about 5-7 minutes. Flip and sear the other side for another 5 minutes.
  4. Transfer the skillet to the preheated oven and roast the chicken for 25-30 minutes or until the internal temperature reaches 165°F (74°C).
