Ingredients

INGREDIENTS

  • 4 cups low-sodium chicken or vegetable broth
  • 1/2 teaspoon saffron threads
  • 1 tablespoon olive oil
  • 1 small onion, finely chopped
  • 2 garlic cloves, minced
  • 1 cup Arborio rice
  • 1/2 cup dry white wine (optional)
  • 1 cup fresh spinach, chopped
  • 1 pound shrimp, peeled and deveined
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste
  • Zest and juice of 1 lemon
  • 1/2 cup heavy cream
  • Fresh parsley for garnish (optional)

Instructions

  1. In a small pot, heat the broth over low heat and add the saffron threads to infuse.
  2. In a large skillet, heat olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes. Stir in the minced garlic and cook for an additional minute.
  3. Add the Arborio rice to the skillet and toast for 1-2 minutes, stirring frequently until the rice is lightly golden.
  4. Pour in the white wine (if using) and let it simmer until mostly absorbed.
  5. Begin adding the warm saffron-infused broth one ladle at a time, stirring constantly. Wait until the liquid is absorbed before adding more. Continue this process for about 18-20 minutes until the rice is creamy and al dente.
  6. Stir in the chopped spinach and shrimp, cooking until the shrimp are pink and cooked through, about 3-5 minutes.
  7. Remove from heat; stir in the Parmesan cheese, lemon zest, and juice. Season with salt and pepper to taste.
  8. In a small bowl, whisk together the heavy cream and remaining lemon juice until slightly thickened. Serve the risotto topped with a drizzle of lemon cream and garnish with fresh parsley if desired.

Notes

Note: For a lighter version, substitute heavy cream with Greek yogurt mixed with a bit of lemon juice.

For a richer flavor, consider adding a splash of white wine before incorporating the broth. This adds depth and a little acidity that brightens the dish even further. If you don’t have saffron, a pinch of turmeric can be a good substitute, although the flavor will differ slightly.

Leftovers can be stored in the refrigerator for up to 3 days. Reheat gently on the stove with a splash of broth or water to maintain creaminess. Garnish with fresh parsley or extra lemon zest before serving for a fresh kick.
