  • 6 large eggs
  • 1 ripe avocado
  • 1 tablespoon mayonnaise
  • 1 teaspoon chipotle in adobo sauce
  • 1 teaspoon lime juice
  • Salt and pepper to taste
  • Fresh cilantro for garnish
  • Smoked paprika for garnish

Instructions

  1. Place eggs in a saucepan and cover with water. Bring to a boil over medium-high heat, then cover and remove from heat. Let sit for 10-12 minutes.
  2. Transfer eggs to an ice bath to cool for 5 minutes, then peel them.
  3. Slice the eggs in half lengthwise and remove the yolks. Place the yolks in a bowl and set the egg whites aside.
